Seville Estate has been awarded the once in a lifetime honour ‘Winery of the Year’ at the 2019 Halliday Wine Companion Awards. We are completely blown away by this news.
To celebrate this humbling honour, we put together some mixed packs of past vintage wines, and we are so excited to share them with you, our friends, family and supporters over the years.
Pack includes 2 x 2013, 2 x 2014, 2 x 2015 Estate Shiraz 750ml
Fruit is handpicked, de-stemmed into an open bin and then tipped into 3 ton open fermenter vats, avoiding the use of pumping. 20% whole bunches are added and then chilled for 4 days. Fermentation starts naturally with wild yeast. The must is hand plunged daily, and malolactic co-fermentation occurs. The wine is then pressed off skins and run directly to 500L & 300L barrels. Around 20% new French oak and 80% older barrels are used to mature the wine for 12 months. The wine is then carefully racked and bottled without fining or filtration.
